La presente investigación es sobre la industrialización el Arazá en Pedro Vicente Maldonado cantón de la provincia de Pichincha e incluye las siguientes etapas. En el primer capítulo se determino las prácticas culturales y el manejo de cosecha y poscosecha de la fruta, así también como los riesgos como las plagas y enfermedades a los que esta expuesto este cultivo. En el segundo capítulo se realizó la propuesta del proceso productivo donde se consideró realizar un diseño experimental que permita saber los rendimientos de la fruta en dos procesos de despulpado: en forma manual y el segundo en forma mecánica, los mismos que no presentan diferencias significativas, lo cual demuestra que el Arazá puede ser sometido a un proceso de industrialización obteniéndose buenos resultados. En el tercer capítulo se realizó un estudio de mercado con una segmentación de mercado fundamentado en la apreciación de las características exóticas del producto realizando una encuesta con preguntas abiertas y cerradas en los hoteles de lujo seleccionados, determinando el volumen de producción. Con los datos obtenidos en el estudio se realizó el diseño de planta que permitió definir áreas, maquinaria y personal para cubrir con la demanda teórica. Finalmente se realizó un análisis financiero que determino una inversión de $ 99.332.80 USD con una VAN de $193.604.81 USD y un TIR del 42.53% haciendo de este un proyecto rentable. This research is on the industrialization of the Arazá in Pedro Vicente Maldonado a Canton of the Pichincha province and includes the following stages. In the first chapter determined the cultural practices, the harvest and postharvest management of the fruit. Also the risks as plagues and diseases to that this one exposed this culturing. In the second chapter there was realized the offer of the productive process where it was considered to realize an experimental design that allows to know the performances of the fruit in two processes of pulping: in manual form and the second one in mechanical form, the same ones who do not present significant differences, which demonstrates that the Arazá can be submitted to a process of industrialization obtained good results. In the third chapter a market research was realized by a segmentation of market based on the appraisal of the exotic characteristics of the product realizing a survey with questions opened and closed in the hotels of luxury selected, determining the volume of production. With the information obtained in the study there was realized the design of the industrial plant that allowed to define areas, machinery and personnel to cover with the theoretical demand. Finally a financial analysis was realized and determined an investment of $ 99.332.80 USD with one NPV of 193.604.81 $ USD and a TIR of 42.53% doing of this one a profitable project. |
